Easy Leek, Carrot & Sausage Recipe

It’s summer time and who likes standing in the kitchen sweating over a hot stove to cook a meal? Not me! This one pot meal is fast, easy and tasty. If you like convenience and minimal dishes to wash like me, you have to try this. Feel free to modify with other vegetables like asparagus, onions, peppers, tomatoes, or leafy greens like kale or chard. Most importantly, sit down, take a deep breath and ENJOY!

Easy Leek, Carrot & Sausage Recipe

  • 2 large leeks, rinsed and chopped
  • 3 large carrots, peeled and chopped
  • 1 lb sweet Italian sausage (preferably from humanely raised, foraged pigs)
  • 1 TBS duck fat (or other fat of choice like coconut oil, butter or lard)
  • ½ cup bone broth or water
  • Sea Salt and Pepper to taste
  1. Pre-heat a large pan over medium high heat.
  2. Melt the fat in the pan and add sausage. Brown on all sides, cooking thoroughly - about 10 minutes. Remove from pan and set aside
  3. Drain excess fat in pan, leaving about 1 TBS. Add chopped leeks and carrots. Stir until carrots are tender but not mushy (a fork can stick in them easily but they don't crumble!).
  4. Add bone broth or water and stir.
  5. Add cooked sausage back to the pan and mix to incorporate.
  6. Season with salt and pepper.
