Hearty Leek & Bacon Soup

DSC_9146I love me some soup in the winter! Except it is not really feeling like winter in the North East these days, tomorrow it will be 70 degrees on Christmas Eve. Unbelievable. Oh well, that is not going to keep me from making some heartwarming soup. It’s a busy day here with wrapping gifts and last minute errands, so I am going to keep this post short and sweet. Hearty Leek & Bacon Soup

Serves: 10 servings
  • 1 lb bacon, chopped (omit for vegetarian version)
  • 1 large leek, sliced into ¼-1/2 inch pieces
  • 1 bag (about 3 cups) small fingerling organic potatoes, sliced in half
  • 3-4 large carrots, sliced into ¼-1/2 inch pieces
  • 6 cups homemade bone broth (or vegetable broth)
  • 2 cloves garlic, chopped
  • 1 tsp thyme
  • 1 bay leaf
  • salt and pepper to taste
  1. Brown bacon in large stock pot.
  2. Drain bacon fat, add bacon back to pot.
  3. Add chopped garlic and stir, 1 minute.
  4. Add the remaining ingredients, keeping in mind you want the broth/water to almost cover the vegetables. Cover the pot, bring to a boil and then reduce to a simmer, slightly covered until potatoes are soft but not mushy.
  5. Serve with some chopped scallions (optional).
