Buffalo Chicken Cauliflower Crust Pizza

Cheese! Cheese has been slowly working its way back into our diets, which has been alright for most of us (I still think I might have a slight lactose intolerance). If you are a stickler for the no cheese “rule” you may be able to make this recipe without cheese, although I’m not sure the crust will stick together without the cheese. I make no guarantees.

When we do buy cheese it is organic and/or raw and local. We have a vendor at our farmers’ market that sells fresh mozzarella from his grass-fed cows, and that is a good option too.

Anyway, my husband has been obsessed with cauliflower pizza and his most recent version was my favorite. Buffalo chicken! WHHHAAT? Yea, man. nom. nom. nom.

INGREDIENTS

2 cups fresh cauliflower (not frozen), pureed in food processor
1/2 tsp garlic powder
1 tsp basil
1/2 cup shredded mozzarella cheese
1 egg
2 TBS butter, melted
1 TBS hot sauce (or more if you like it hot)
1/2 tsp garlic powder
1 cup chopped cooked chicken (leftover chicken works well!)
1/2 cup shredded mozzarella cheese

DIRECTIONS

  1. Pre-heat oven to 400°
  2. Pulse cauliflower in food processor until it looks like rice. Put cauliflower in microwave for 8 minutes to dry it out (don’t add any water or other liquid). Let it cool.
  3. To the microwaved cauliflower add 1/2 tsp garlic, 1 tsp basil, 1/2 cup shredded mozzarella cheese and 1 egg. Mix thoroughly.
  4. Grease pie pan with coconut spray or butter. Spread the cauliflower mixture evenly in the pan. Bake until the edges are slightly browned. Take it out. Move the rack to broil position, turn on broiler. Stick the crust back in to broil for 2-3 minutes or until the top is golden brown. (my husband insists this it is worth the extra step to make sure the crust is crispy and not mushy).
  5. While the cauliflower crust is baking, mix the 2 TBS melted butter, 1 TBS hot sauce, 1/2 tsp garlic powder in a bowl. Reserve 1 TBS hot sauce mixture. Add the chopped chicken and mix it up!
  6. Lightly coat the crust with the hot sauce  mixture, sprinkle cheese on top and then add the rest of the hot sauce/chicken mixture on top of that.
  7. Turn the oven to broil and broil the pizza until the cheese is melted.

Holy wow. It’s good.

There are plenty of variations for this recipe, get creative, do what you want!

Also, this is an awesome way to sneak veggies into your kids’ diet. My son gobbles this stuff up.
