Super Fast Prosciutto, Avocado, & Cucumber Lunch

So, if you haven’t read about my crazy week last week, you might not understand exactly where I’m coming from.  But, I bet you can probably relate to not having enough time or energy to pack a lunch every day.  Ya?

I simply can not justify spending $6 a day on a value meal or $5 on a foot-long when I know I can eat really healthy and not break the bank if I do a little planning.  To make stressful weeks a little less stressful I make sure to always have a variety of items in the fridge ready to go if I’m in a rush.

Here is a simple idea for a high protein lunch to keep your energy steady throughout the afternoon. Feel free to substitue the prosciutto for another lunch meat or leftover protein from dinner (Applegate makes good stuff. It is sold at Trader Joe’s, Whole Foods and online).

INGREDIENTS:
One avocado, pit removed, salt and pepper to taste
3-4 slices of Prosciutto
1 organic cucumber, sliced (peeled or unpeeled, doesn’t matter, I prefer peeled)

PREPARATION:
Put everything on a plate.

I found some decent Prosciutto at Costco, imported from Italy. It was $12.99 for about 2 pounds. You can also find 1/2 pound of Applegate roast beef at Trader Joe’s for $3.99. Prices vary of course, but one pack can net at least 2-3 lunches paired with a couple veggies.  I wouldn’t recommend eating lunch meat every day since it isn’t the best quality animal meat you can eat. But it’ll do on occasion, plus it is affordable, which I like!
